Healthiest ‘soft serve’ ever – Chocolate and Strawberry ricotta soft serve with no refined carbs

Chocolate and strawberry soft serveI did a 22km mountain bike mission today followed by a 1 hour run including hilly trails and towards the end of the run I started thinking about what I would prepare for dinner and dessert tonight. This combination of Chocolate ‘soft serve’ with a Strawberry ricotta ‘soft serve’ came to me like a stroke of genius.

I made the soft serve with frozen reduced fat coconut cream, ricotta cheese and Greek yoghurt. I used frozen strawberries, vanilla extract, cinnamon and a touch of stevia to flavour and sweeten the Strawberry ricotta soft serve. Cocoa powder, vanilla extract and stevia were used in the Chocolate soft serve.

Chocolate and strawberry soft serve 2So you see eliminating refined carbohydrates from one’s diet does not mean that one has to forgo delicious food. I would not normally buy cacao nibs or coconut flakes as I consider these items luxuries and not within my budget, but I thought that a soft serve combination this good deserved some special toppings. Plus it was the weekend so I thought “Screw it”!!

Chocolate and Strawberry Ricotta soft serve

Makes 2 serves

Ingredients

Strawberry ricotta soft serve

5 large strawberries, washed, tops removed and frozen

½ cup reduced fat ricotta cheese

200ml reduced fat coconut cream or milk

½ teaspoon vanilla extract

¼ teaspoon cinnamon

½ teaspoon stevia

Chocolate soft serve

½ cup Greek yoghurt

200ml reduced fat coconut cream or milk

2 tablespoons cocoa powder

1 teaspoon stevia

½ teaspoon vanilla extract

Optional: Cacao nibs and coconut flakes to sprinkle on top

Utensils

Small containers (see photo below for examples of the containers I use) or ice cube trays

Soft serve containersMeasuring cups and spoons

Sharp knife

Chopping board

Food processor

Method

  • Add the ricotta cheese, coconut cream or milk and Greek yoghurt to the small containers or ice cube trays and freeze for about 4 hours.
  • Remove the frozen ricotta cheese and 200mls of the coconut cream or milk from the small containers (if using) by running hot water over the bottom of them. Chop the frozen ricotta cheese and coconut cream into chunks using a sharp knife.
  • For the Strawberry soft serve first add the frozen strawberries to the food processor and process until they are finely chopped.
  • Add the chunks of frozen ricotta cheese and coconut milk gradually to the food processor and process until the soft serve is smooth (this will take at least 5 minutes so be patient). Add in the vanilla extract, cinnamon and stevia during the processing. Divide the Strawberry ricotta soft serve between 2 bowls and place the bowls in the freezer while you prepare the Chocolate soft serve. Clean the food processor.
  • For the Chocolate soft serve remove the remaining frozen coconut cream or milk and Greek yoghurt from the small containers as described above. Chop the frozen coconut cream or milk and Greek yoghurt into chunks using a sharp knife.
  • Gradually add the frozen chunks to the food processor and process until the soft serve is smooth. Add in the cocoa powder and stevia during the processing.
  • Add the Chocolate soft serve to the bowls with the Strawberry ricotta soft serve. Freeze for an extra 10 – 15 minutes to allow the soft serve to firm up. Sprinkle with cacao nibs and coconut flakes to serve. Enjoy your delicious and healthy creation.
