Just a quick post to share with you the smoothie bowl that I had this morning and my attempt at food art. Clearly I have been spending too much time looking at photos on Instagram! I hope you like my attempt because it caused me to run late for work. This smoothie bowl contains spinach for vitamins and minerals, banana whey powder and low-fat Greek yoghurt for protein, coconut milk, walnuts and pepitas for some fats, strawberries for flavour and some carbohydrates (not too many) and the matcha green tea for extra antioxidants. It makes for a pretty quick and easy, complete and nutritious, but fairly low carb breakfast.
Strawberry, banana and matcha green tea smoothie bowl
4 blocks of frozen spinach
30 grams of a good quality banana flavour whey protein powder
1/2 cup coconut milk
2 tablespoons low-fat Greek yoghurt
1 tablespoon matcha green tea powder
2 trays of ice cubes
Extra strawberry, walnuts, pepitas and shredded coconut to sprinkle on top
Measuring cups and spoons
- Add all the ingredients into a high-speed blender and blend until the mixture is smooth. This mixture is quite thick and I had to stir it during the blending process.
- Pour the smoothie into a bowl, top with the extras and eat with a spoon.
