Easy low carb Coconut jelly

Easy coconut jellyIf you are looking for an easy, low carb, light and delicious dessert then look no further. Try this Coconut jelly made with gelatin (which is good for your skin) and sprinkled with toasted coconut.

Coconut jelly

Makes 2 serves

Ingredients

270ml coconut milk

¾ cup shredded coconut

5 drops of vanilla flavour liquid stevia

1 ½ teaspoons of gelatin dissolved in 2 tablespoons of boiling water

Utensils

Large mixing bowl

Measuring cups and spoons

Spoon to mix

Small mixing bowl

Square or rectangle container

Baking paper

Small saucepan

Method

  • Pour the coconut milk into a large mixing bowl. Add in ½ cup of the shredded coconut and liquid stevia and mix.
  • In the small mixing bowl completely dissolve the gelatin in the boiling water. Add the dissolved gelatin to the coconut milk and stir well.
  • Pour the coconut mixture into a square or rectangle container lined with baking paper. Chill in the refrigerator for at least two hours or until the jelly is firm.
  • Toast the remaining shredded coconut in a small sauce pan until it is golden brown. Cut the jelly into squares and sprinkle with the toasted coconut to serve.
