Quick, easy and cheap whole food Chicken cashew

Chicken cashewQuick, easy, healthy and cheap – this Chicken cashew is perfect for a weeknight dinner. It is made with all whole foods (well perhaps not the soy sauce). I had mine with a cup of cauliflower ‘rice ‘while the active boyfriend had his with steamed white rice. The cost was $4.80 per serve including cauliflower rice*.

Chicken cashew

Makes 2 serves


1 chicken breast, cut into thin strips

1 onion, chopped

2 cloves garlic, finely minced

2cm fresh ginger, finely grated

1 cup cashews

2 carrots, chopped into rounds

½ red capsicum, cubed

1 cup frozen peas

3 tablespoons soy sauce

1 teaspoon sesame oil

¼ teaspoon chilli flakes

1 tablespoon honey


  • Cook the chicken, onion, garlic and ginger in ¼ cup of water in a non-stick pan. When the chicken is cooked, add the cashews and continue cooking until the cashews being to brown.
  • Add the vegetables, soy sauce, sesame oil, chilli flakes and honey, turn the heat down to medium and continue cooking until the carrot and capsicum are cooked but still slightly crunchy.

*Total cost based on all groceries purchased at Aldi excluding the sesame oil.
