Simple Thai beef salad

This salad is extremely easy to prepare. If you plan to marinate the beef, allow yourself 30 minutes. The salad dressing that accompanies the salad is quite versatile. I will mix tuna with the dressing and toss that through a salad for lunch, or use it in a cauliflower ‘rice’ salad. For additional carbohydrates, steamed white rice can be served with this salad. I served my salad with steamed edamame sprinkled with salt, pepper, ground ginger and sesame oil for additional carbohydrates, protein and fibre.

Simple Thai beef salad

Serves 2

250 grams beef, cut into thin strips

1 clove garlic, minced

2 tablespoons lime juice

2 tablespoons soy sauce

2 – 3 cm fresh ginger, grated or 1 teaspoon ground ginger

¼ teaspoon dried chilli

2 shallots, sliced thinly

Lettuce leaves of choice

1 tomato, chopped

½ cup cucumber, sliced thinly

1 carrot, in ribbons

Salad dressing

2 tablespoons lime juice

2 tablespoon soy sauce

½ clove garlic, minced

½ teaspoon ground ginger

¼ teaspoon dried chilli

1 teaspoon honey

1 tablespoon warm water

  • Combine the garlic, lime juice, soy sauce, ginger and chilli in a medium sized bowl. Add the beef strips, mix and marinate covered in the fridge for at least 30 minutes.
  • While the beef is marinating, make the salad. To make the salad dressing, combine all the ingredients in a small bowl and mix well.
  • Add the sliced shallot to a non-stick pan with ¼ cup water. Cook the shallots until soft.
  • Add the steak along with any of the marinade and continue cooking until well done and all the marinade has concentrated.
  • Drizzle the salad dressing over the salad and serve with steak on the side.

Total cost for two serves (excluding edamame) = $6.85 based on groceries purchased at Aldi
