Super healthy Mexican bowl

With a tin of kidney beans, some onion and garlic, cumin, paprika, salt and a mixture of vegetables, you have all the necessary components to make a simple, tasty, nutritious and cheap Mexican-style dish. Tonight I made these Mexican bowls consisting of Raw lime cauliflower ‘rice’ topped with Mexican beans, fresh salsa, pea guacamole, shredded lettuce and some Greek yoghurt. This meal was very light and fresh, with plenty of vegetables, and protein and fibre provided by the beans. For additional protein, beef or chicken could be added to the Mexican beans. The cauliflower ‘rice’ cannot be seen in the photo but it is underneath all those toppings. Don’t be put off by what appears to be a long list of ingredients. Super healthy Mexican bowl

Makes 2 large serves

Ingredients

Mexican beans

1 400 gram tin kidney beans, drained and rinsed

½ red onion, chopped

1 clove garlic, minced

1 tablespoon cumin

½ tablespoon paprika

1 vegetable stock cube

Water for cooking

Salsa

½ red onion, chopped

3 tomatoes, chopped

Juice of ½ a lime

Salt, to taste

Raw lime cauliflower ‘rice’

1/3 head of cauliflower

Juice of ½ lime

Salt, to taste

Pea guacamole

1 and 1/2 cup frozen peas, thawed

¼ cup Greek yoghurt

1 clove garlic

Salt, to taste

Shredded lettuce to serve

Method

Mexican beans

  • Crumble the stock cube into a non-stick pan with ½ cup water. Add the spices and cook the onion and garlic adding water as necessary to prevent sticking. Turn the heat down, add the beans plus an extra 1/2 cup of water and mix well. Heat the beans through.

Salsa

  • Combine the chopped onion, tomatoes, lime juice and salt in small bowl and mix well.

Raw Lime Cauliflower rice

  • Break the cauliflower into small florets and add to a food processor.
  • Add the lime juice and salt and process until the cauliflower resembles the texture of rice. Don’t over process the cauliflower. You want it to maintain a crunchy texture.
  • Divide the cauliflower rice between two bowls.

Pea guacamole

  • Add all the ingredients to a food processor and process until a smooth, even consistency is achieved.
  • To assemble the Mexican bowls place a layer of beans on top of the cauliflower rice. Sprinkle with shredded lettuce, salsa, pea guacamole and an extra spoonful of Greek yoghurt.
