I often hear people say ‘salads are boring’. I disagree. Salads do require some creativity. I like to add roast vegetables, such as pumpkin, mushrooms cooked in balsamic vinegar, chickpeas, beans, homemade guacamole or a sliced boiled egg. But it is often the salad dressing that really makes a salad. I have several salad dressings that I routinely make and this Creamy honey mustard dressing is one that I use often. Try it on your next salad to add some variety to your lunches. The recipe below makes enough for two large salads, depending on how much dressing you like. One suggestion is to mix 1/2 cup of drained and rinsed chickpeas with half the recipe below. Keep the chickpeas in dressing in a separate container to your salad then add the chickpeas at lunch time.
1/4 cup Greek yoghurt
1 tablespoon Dijon mustard
3/4 tablespoon red wine vinegar
1 teaspoon honey
- Add all ingredients to a small bowl and mix well until all combined.
