I like smoothies. They allow you to blend up a whole bunch of greens and make it taste good. But I also like to eat my breakfast. So to overcome this problem, I make my smoothie extra thick, pour/scoop it into a bowl, sprinkle some nuts and coconut on top and eat it with a spoon. Here is my recipe for a Green smoothie breakfast bowl. Don’t be put off by the fact that it looks like baby poo. It tastes good and is quite good for you.
Green smoothie breakfast bowl
2 trays of ice cubes
2 blocks of frozen spinach
2 tablespoons cottage cheese
2 scoops vanilla whey protein powder
2 tablespoons cocoa powder
1/2 cup coconut milk
1 teaspoon cinnamon
Walnuts and desiccated coconut for sprinkling on top
Extra coconut milk to assist with blending
- Place all the ingredients into a high speed blender. Blend until a thick, even consistency is achieved. You may need to stop and stir during the blending process or add additional coconut milk.
- Empty into a bowl, sprinkle with walnuts and coconut and eat with a spoon.
I usually follow a pretty low carbohydrate diet, so if this smoothie is not sweet enough for you, perhaps add a little bit of honey.
