You can’t have your smoothie and eat it too – or can you?

I like smoothies. They allow you to blend up a whole bunch of greens and make it taste good. But I also like to eat my breakfast. So to overcome this problem, I make my smoothie extra thick, pour/scoop it into a bowl, sprinkle some nuts and coconut on top and eat it with a spoon. Here is my recipe for a Green smoothie breakfast bowl. Don’t be put off by the fact that it looks like baby poo. It tastes good and is quite good for you. Smoothie bowl

Green smoothie breakfast bowl

Serves 1

Ingredients

2 trays of ice cubes

2 blocks of frozen spinach

2 tablespoons cottage cheese

2 scoops vanilla whey protein powder

2 tablespoons cocoa powder

1/2 cup coconut milk

1 teaspoon cinnamon

Walnuts and desiccated coconut for sprinkling on top

Extra coconut milk to assist with blending

Method

  • Place all the ingredients into a high speed blender. Blend until a thick, even consistency is achieved. You may need to stop and stir during the blending process or add additional coconut milk.
  • Empty into a bowl, sprinkle with walnuts and coconut and eat with a spoon.

I usually follow a pretty low carbohydrate diet, so if this smoothie is not sweet enough for you, perhaps add a little bit of honey.
